Soak Ingredients
In a large bowl, combine the rice, urad dal, and fenugreek seeds. Rinse them under cold water until the water runs clear. Then, soak the mixture in enough water to cover the ingredients for at least 6-8 hours or overnight.

Blend Batter
After soaking, drain the mixture and transfer it to a blender or wet grinder. Add around 2 cups of fresh water and blend until you achieve a smooth batter. The consistency should be similar to that of pancake batter, semi-thick but pourable.

Ferment the Batter
Transfer the blended batter into a large bowl and cover it with a cloth. Let it sit in a warm place for about 8-12 hours or until the batter has fermented and has increased in volume. It should have a slightly sour aroma.

Add Salt
Once fermented, gently stir the batter and add salt. Mix well until the salt is fully incorporated.

Cook the Dosa
Heat a non-stick pan or griddle over medium heat. Once hot, pour a ladleful of the batter onto the center of the pan. Use the back of the ladle to spread it into a circular shape. Drizzle a little oil or ghee around the edges.

Cook Until Golden
Cook the dosa for about 2-3 minutes until the bottom is golden brown. Flip it carefully and cook for an additional 1-2 minutes on the other side. Once cooked, remove the dosa from the pan and keep it warm in a container.

Repeat Cooking
Repeat the process for the remaining batter, adding more oil or ghee as needed. Serve the dosas hot with chutney and sambar.
