Method
Preparing the Samosas

Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Gradually add water and knead to form a firm yet pliable dough. Cover and let it rest for about 30 minutes.

Prepare the Filling
In a large bowl, mix together the boiled and mashed potatoes, boiled green peas, cumin seeds, garam masala, chili powder, coriander powder, and chopped cilantro. Mix well and set aside.

Roll and Shape the Samosas
After the dough has rested, divide it into small balls. Roll each ball into thin circles (about 6 inches in diameter). Cut each circle in half, form a cone with one half, and seal the edges with water. Fill with the potato-pea mixture and seal the top.

Fry the Samosas
Heat oil in a deep frying pan over medium heat. Carefully add the prepared samosas and fry until golden brown and crispy on all sides. Remove and drain on paper towels.
Preparing the Chana Masala

Add Ginger-Garlic Paste
Stir in the ginger-garlic paste and sauté for a couple of minutes until fragrant.

Cook the Tomatoes and Spices
Add the chopped tomatoes, cumin powder, coriander powder, chili powder, turmeric powder, and salt. Cook until the tomatoes are soft.

Add Chickpeas and Water
Mix in the chickpeas and add the water. Stir well, cover, and let it simmer for about 10 minutes. Finish by stirring in the garam masala.
Making Chutneys and Yogurt Sauce

Prepare Mint Chutney
In a blender, combine mint leaves, cilantro, green chili (if using), and a splash of water. Blend until smooth. Adjust seasoning if needed.

Assembling the Samosa Chat

Layer the Ingredients
On a serving plate, break the fried samosas into bite-sized pieces. Spoon the chana masala over the top, followed by drizzles of mint chutney and yogurt sauce.

Garnish
Optional: garnish with additional chopped cilantro and a sprinkle of chaat masala if desired.
