Soaking the Ingredients
Wash the rice and urad dal thoroughly under running water. In a large bowl, combine the washed rice, urad dal, and fenugreek seeds. Add enough water to cover the ingredients and let them soak for at least 6 hours or overnight for best results.

Grinding the Batter
After the soaking period, drain the soaked ingredients. In a blender, add the soaked rice and dal mix, along with a portion of the soaking water (about 1 cup). Blend until you have a smooth batter. Add more water as needed to achieve a pouring consistency. The batter should be thick but pourable.

Fermenting the Batter
Transfer the ground batter to a large bowl. Cover it with a clean kitchen towel and allow it to ferment in a warm place for 8-12 hours or until it doubles in size and appears fluffy.

Cooking the Dosa
After fermentation, gently mix the batter and add salt to taste. Heat a non-stick skillet or griddle over medium heat. Pour a ladleful of batter onto the skillet and spread it in a circular motion to form a thin layer. Drizzle a little oil or ghee around the edges of the dosa.

Flipping and Serving
Cook the dosa for about 2-3 minutes or until the edges turn golden brown and crispy. Flip it over and cook for an additional minute. Remove from the skillet and serve hot with chutney or sambar.
