Method

Cooking the Kulchas

    Divide the Dough

    Once the dough has rested, divide it into equal portions (about the size of a tennis ball).

    Stuff the Dough Balls

    Take one dough ball, flatten it slightly and place a generous amount of the filling in the center. Bring the edges of the dough together to encase the filling, pinch to seal, and then gently flatten.

    Roll Out the Kulcha

    Dust the filled dough ball lightly with flour and roll it out into a round shape, about 6-7 inches in diameter. Ensure it’s not too thick or thin.

    Cook the Kulcha

    Heat a tava or skillet over medium heat. Place the rolled out kulcha on the skillet and cook for about 2 minutes on one side until small bubbles form.

    Flip and Apply Ghee

    Flip the kulcha and apply a little ghee or butter on the cooked side. Cook for another 1-2 minutes until it’s golden brown.

    Repeat the Process

    Repeat the rolling and cooking process for the remaining dough balls and filling.

    Serve

    Serve the paneer kulchas hot, garnished with additional coriander and accompanied by chutney or curry.
