    Prepare Spinach

    Wash the palak (spinach) thoroughly under cold water, then boil it in a pot with a little water for about 2-3 minutes until it wilts. Drain and run it under cold water to stop the cooking process. Once cooled, blend it into a smooth puree.

    Cook the Paneer

    Cut the paneer into cubes and lightly fry them in a tablespoon of oil until they are golden brown on all sides. Remove and set aside.

    Prepare the Base

    In the same pan, add another tablespoon of oil. Once hot, add cumin seeds and allow them to sputter. Then, add the finely chopped onion, mixing until it turns golden brown.

    Add Tomatoes and Spices

    Add the chopped tomato, garlic, ginger, and green chilies to the onions. Cook until the tomatoes soften, about 5-7 minutes. Then add turmeric powder and salt, cooking for another minute.

    Combine Spinach and Paneer

    Add the spinach puree to the pan, mixing well with the other ingredients. If the consistency is too thick, add a little water to achieve your desired texture. Add the fried paneer and carefully mix it in.

    Finish with Seasoning

    Sprinkle garam masala and lemon juice over the palak paneer, mixing gently. Let it simmer for another 2-3 minutes for the flavors to meld.

    Remove from heat and serve hot with roti, naan, or rice.
