Marinate the Mutton
In a large bowl, combine the mutton pieces with yogurt, ginger paste, garlic paste, turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well until the mutton is evenly coated and marinated. Cover and let it sit for at least 1 hour or preferably overnight in the refrigerator for best flavor.

Cook the Mutton
Add the marinated mutton to the pan and increase the heat to high. Stir-fry the mutton, making sure to cook it evenly. Sear the mutton for about 5-7 minutes, allowing it to brown nicely.

Simmer
Reduce the heat to medium-low, cover the pan, and let the mutton cook for 25-30 minutes, stirring occasionally, until the meat is tender and cooked through. If needed, add a little water to prevent sticking.

Garnish and Serve
Once the mutton is cooked, remove from heat, and garnish with freshly chopped cilantro. Serve hot with naan or rice.
