    Prep the Rice

    Rinse 2 cups of basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

    Cook the Cauliflower

    In a large pan, heat 2 tablespoons of oil or ghee over medium heat. Add the cumin seeds and sauté until they begin to splutter. Add the thinly sliced onion and cook until soft and golden brown.

    Add Vegetables and Spices

    Stir in the minced garlic, grated ginger, and green chilies. Cook for 1-2 minutes until fragrant. Add the cauliflower florets, chopped tomato, turmeric powder, and salt. Stir well to coat everything in spices.

    Cook the Cauliflower Curry

    Reduce the heat to low, cover the pan, and let the cauliflower cook for about 10 minutes, stirring occasionally until tender. Once cooked, add the chopped mint and coriander leaves and mix well. Remove from heat and set aside.

    Boil the Rice

    In a separate pot, bring 4 cups of water to a boil. Add the drained basmati rice and cook until the rice is 70% cooked (about 5-6 minutes). Drain the rice and set aside.

    Layer the Biryani

    In the same pan with the cauliflower curry, layer the partially cooked rice over the cauliflower. Sprinkle garam masala over the rice and drizzle with the remaining 2 tablespoons of oil or ghee. Gently fluff the rice with a fork.

    Final Cooking

    Cover the pot with a lid and reduce the heat to the lowest setting. Cook for an additional 15-20 minutes, allowing the flavors to meld and the rice to fully cook.

    Serve

    Once done, fluff the biryani again before serving. Serve hot with raita or a side salad.
