Cooking Noodles

Boil Water
In a large pot, bring 2 litres of water to a rolling boil. Add 1 tsp of salt to the water.

Cook Noodles
Add 200 grams of Hakka noodles to the boiling water. Cook according to package instructions, usually about 5-7 minutes, until they are al dente. Drain the noodles and set aside.
Preparing Mintt Chicken

Marinate Chicken
In a bowl, combine 400 grams of chicken breast (cut into thin strips), 1 cup of chopped mint leaves, 1 tbsp of ginger-garlic paste, 2 tbsp of soy sauce, 1 tbsp of chili sauce, and 1 tsp of black pepper powder. Mix well and let it marinate for at least 30 minutes.

Cook the Chicken
In a large pan, heat 2 tbsp of oil over medium heat. Once hot, add the marinated chicken. Cook for about 7-10 minutes or until the chicken is fully cooked and golden brown, stirring occasionally.

Combine with Noodles
Add the cooked Hakka noodles to the pan with the chicken and vegetables. Toss everything together until the noodles are well mixed with the chicken and vegetables.

Garnish
Top the chicken Hakka noodles with 1 cup of chopped spring onions for added crunch and flavor.
