    Prepare Ingredients

    Wash basmati rice thoroughly and soak it in water for 30 minutes. Chop the mint leaves, cilantro, and onions.

    Cook the Chicken

    In a large pot, heat oil over medium heat. Add cumin seeds, cardamom, cloves, and bay leaves. Once they crackle, add the sliced onions and sauté until golden. Stir in ginger-garlic paste and cook for another 2 minutes.

    Add Spices

    Add the biryani masala, turmeric powder, red chili powder, and chopped tomatoes. Cook for 5-7 minutes until the tomatoes soften.

    Incorporate Chicken and Yogurt

    Add the chicken pieces and yogurt to the mixture. Mix well, cover, and let it cook on low heat for 15-20 minutes until the chicken is tender and fully cooked.

    Cook the Rice

    In a separate pot, bring water (4 cups) to a boil. Add soaked basmati rice and salt to taste. Cook until the rice is 70% done, then drain the water.

    Layer the Biryani

    In the pot with cooked chicken, layer the 70% cooked rice. Top with chopped mint and cilantro. Cover tightly and cook on low heat for another 20-25 minutes until fully cooked.

    Serve

    Once cooked, fluff the biryani gently with a fork. Serve hot with raita or salad.
