Preparation Steps
1. Roast Peanuts
In a dry skillet over medium heat, add the raw peanuts. Roast them for about 10-12 minutes or until they turn golden brown and fragrant, stirring frequently to prevent burning.
2. Prepare Vegetables
While the peanuts are roasting, finely chop the onion and tomato. Set them aside.
3. Cook Onions
In a separate pan, heat the oil over medium heat. Add the chopped onions and sauté until they are translucent and lightly browned, about 3-4 minutes.
4. Add Tomatoes
Add the chopped tomatoes to the pan with the onions. Cook for another 3-4 minutes until the tomatoes soften and release their juices.
5. Add Spices
Stir in the turmeric powder, red chili powder, and garam masala. Mix well and cook for an additional minute to toast the spices.
6. Combine Peanuts
Add the roasted peanuts to the pan and mix until they are well coated with the onion-tomato mixture. Season with salt to taste.
7. Garnish
Remove from heat and stir in chopped coriander leaves for freshness. Serve warm or at room temperature.
