Cooking Instructions

  1. 1

    Prepare the Basmati Rice

Rinse the Basmati rice under cold running water until the water runs clear. Soak it in water for at least 30 minutes. Drain and set aside.

  2. 2

    Marinate the Goat Meat

In a large bowl, combine the goat meat with yogurt, ginger-garlic paste, and sliced onions. Let it marinate for at least 1 hour, preferably overnight in the refrigerator for more flavor.

  3. 3

    Cook the Marinated Goat

In a large pot or deep pan, heat some oil over medium heat. Add the marinated goat mixture and cook until the meat is browned, about 8-10 minutes. Add the chopped tomatoes and cook until they are mushy.

  4. 4

    Cook the Rice

In another pot, bring water to a boil with a pinch of salt. Add the soaked Basmati rice and cook until the grains are 70% cooked (about 5-6 minutes). Drain the rice and set aside.

  5. 5

    Layer the Biryani

Once the goat is cooked, lower the heat and layer the partially cooked rice over the goat. Add in fresh cilantro and gently mix to combine. Cover the pot with a tight lid and let it cook on low heat for 25-30 minutes to allow the flavors to meld.

  6. 6

    Garnish and Serve

Once the biryani is cooked, fluff the rice gently with a fork. Serve hot, garnished with additional chopped cilantro and lime wedges.
