    Soaking the Ingredients

    In a large bowl, combine the split urad dal, rice, and fenugreek seeds. Pour in enough water to cover the ingredients fully. Allow them to soak for at least 6 hours or overnight.

    Grinding the Batter

    After soaking, drain the dal and rice mixture. In a blender or wet grinder, combine the soaked urad dal and rice with about 1 to 1.5 cups of clean water. Blend until you achieve a smooth, thick batter. You may need to add more water as needed.

    Fermenting the Batter

    Transfer the smoothie to a large bowl and cover it with a damp cloth. Let it ferment in a warm place for about 8 to 12 hours, or until the batter has risen and appears bubbly.

    Preparing the Steamer

    Once the batter has fermented, prepare your idly steamer or a metal pot with a steaming rack. Grease the idly molds with a light coating of oil to prevent sticking.

    Steaming the Idly

    Stir the salt into the fermented batter gently. Fill each idly mold with the batter, about 3/4 full. Place the molds into the steaming setup and cover with a lid. Steam on medium heat for 10 to 15 minutes, or until a toothpick inserted into the idly comes out clean.

    Serving

    Once done, carefully remove the idlies from the molds and serve hot with coconut chutney and sambar.
