Gongura Sauce Preparation

    Prepare the Gongura Sauce

    In a blender, add the gongura leaves, green chilies, chopped onion, garlic cloves, ginger, cumin seeds, and salt. Pour in the water to facilitate blending.

    Blend the Sauce

    Blend the ingredients until you have a smooth paste. Set aside.

Goat Meat Preparation

    Cook the Goat Meat

    In a large pot, heat the oil over medium heat. Add the sliced large onion and sauté until golden brown.

    Add Spices and Goat Meat

    Stir in turmeric powder, red chili powder, and garam masala. Add the goat meat pieces and sear them for about 5-7 minutes until browned on all sides.

    Add Tomato and Gongura Sauce

    Chop the large tomato and add it to the pot along with the prepared gongura sauce. Mix well.

    Simmer

    Cover the pot and let it simmer on low heat for about 1.5 to 2 hours, or until the goat meat is tender. Stir occasionally and add water if necessary.

    Finish the Dish

    Once the goat meat is tender and the sauce is thickened, remove from heat. Garnish with freshly chopped coriander leaves before serving.
