Prepare Gongura Sauce

Cook the Gongura and Spices
In a pan, heat 2 tablespoons of oil over medium heat. Add the gongura leaves and sauté for 2-3 minutes until they wilt.

Add Aromatics
Add the green chilies, garlic cloves, and ginger to the pan. Sauté for an additional 3-4 minutes.

Blend the Mixture
Transfer the mixture to a blender, add 1 teaspoon of salt, and blend until smooth to create the gongura sauce.
Prepare Fish

Marinate the Fish
In a bowl, mix the fish fillets with turmeric powder, red chili powder, and chopped onions. Allow it to marinate for at least 15 minutes.

Cook the Fish
In a non-stick pan, heat a little oil and cook the marinated fish fillets on medium heat for about 5-7 minutes on each side until golden brown and fully cooked.

Combine and Serve
Once the fish is cooked, pour the prepared gongura sauce over the fish fillets and simmer for an additional 2-3 minutes. Garnish with chopped coriander leaves before serving.
