Cooking Instructions

  1. 1

    Prepare the Gongura

Wash the gongura leaves thoroughly in water to remove any dirt. Pat them dry and chop them roughly. Set aside.

  2. 2

    Marinate the Chicken

In a large bowl, combine the boneless chicken with turmeric powder, red chili powder, and salt. Mix well and let it marinate for at least 15 minutes.

  3. 3

    Cook Onion and Tomato

In a large pan, heat the cooking oil over medium heat. Add finely chopped onion and sauté until it turns golden brown. Add chopped tomato and cook until it softens.

  4. 4

    Add Ginger-Garlic and Green Chilies

Add ginger-garlic paste and slit green chilies to the pan. Sauté for about 2 minutes until the raw smell disappears.

  5. 5

    Cook Chicken

Add the marinated chicken into the pan. Stir well to combine with the onion and tomato mixture. Cook for 10 minutes until the chicken is browned.

  6. 6

    Add Gongura Leaves

Stir in the chopped gongura leaves. Mix well and cover the pan. Cook for another 10 minutes, adding water as needed to prevent sticking.

  7. 7

    Finish the Dish

Once the chicken is cooked and the gongura has wilted, add garam masala. Stir well and cook for another 2-3 minutes. Adjust the salt according to taste.

  8. 8

    Serve

Serve hot with rice or roti as preferred.
