Egg Hakka Noodles Recipe

    Cook the Noodles

    Bring a large pot of salted water to a boil. Add the Hakka noodles and cook according to the package instructions, typically around 3-5 minutes until al dente. Drain the noodles and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Chicken

    In a skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced chicken breast and cook for about 5-7 minutes until browned and cooked through. Remove the chicken from the pan and set aside.

    Sauté the Vegetables

    In the same skillet or wok, add the remaining 1 tablespoon of vegetable oil. Add in the sliced onion, bell pepper, and carrot. Stir-fry for about 3-4 minutes until the vegetables are tender. Add the minced garlic and ginger and cook for another minute until fragrant.

    Combine Everything

    Return the cooked chicken to the skillet with the vegetables. Add the cooked Hakka noodles and pour in the soy sauce. Stir well to combine all the ingredients. Season with salt and black pepper to taste. Stir-fry for another 2-3 minutes until everything is heated through.

    Garnish and Serve

    Remove the skillet from heat. Stir in the chopped spring onions. Serve the Egg Hakka Noodles hot, garnished with extra spring onions if desired.
