Prepare the Chicken
Cut the boneless chicken into bite-sized pieces. In a mixing bowl, combine the cornflour, all-purpose flour, salt, black pepper, and red chili flakes. Toss the chicken pieces in the flour mixture until they are evenly coated.

Heat Oil for Frying
In a large frying pan or deep pot, heat the cooking oil over medium-high heat. Use a thermometer to ensure the oil reaches 350°F (175°C) for frying.

Fry the Chicken
Once the oil is hot, carefully add the coated chicken pieces in batches. Fry for about 5-7 minutes or until they are golden brown and cooked through. Remove them using a slotted spoon and drain on paper towels.

Final Adjustments
Taste and adjust seasoning if necessary. You may add more soy sauce or red chili flakes according to your taste.

Once everything is well combined and heated through, transfer the chili chicken to a serving platter. Garnish with fresh cilantro or sliced green onions if desired, and serve hot.
