Prepare the Chicken
Cut the boneless chicken breast into thin strips. Marinate the chicken with soy sauce and cornstarch for about 20 minutes. This will help tenderize the chicken and give it flavor.

Cook the Noodles
Bring a large pot of water to a boil. Add the Hakka noodles and cook according to package instructions until al dente. Once cooked, drain and set aside.

Stir-fry the Vegetables and Chicken
In a large wok or frying pan, heat the vegetable or sesame oil over medium-high heat. Add minced garlic and ginger, and sauté for about 30 seconds until fragrant. Then, add the marinated chicken and stir-fry until fully cooked, about 5-7 minutes.

Combine Noodles and Season
Add the drained Hakka noodles into the wok, along with chopped spring onions, black pepper, salt, and an additional 1 tablespoon of soy sauce for flavor. Toss everything together until well-combined and heated through, about 2-3 minutes. Make sure the noodles are well coated in the sauce.

Serve
Remove from heat and serve the Chicken Hakka Noodles hot. Optionally, garnish with extra chopped spring onions for presentation.
