    Rinse and Soak Rice

    Rinse the Basmati rice under cold running water until the water runs clear. Soak the rinsed rice in water for at least 30 minutes, then drain and set aside.

    Marinate Chicken

    In a large bowl, combine the chicken pieces with yogurt, ginger-garlic paste, biryani masala, and salt. Add chopped tomatoes and green chilies. Mix well and marinate for at least 1 hour, preferably overnight in the refrigerator for deeper flavor.

    Fry Onions

    In a large pot, heat ghee or oil over medium heat. Add the sliced onions and fry until they are golden brown. Remove half for garnishing later.

    Cook Chicken

    To the pot with the remaining onions, add the marinated chicken mixture. Cook over medium-high heat until the chicken is browned and cooked through, about 10-15 minutes.

    Add Whole Spices

    Add the whole spices (bay leaf, cloves, cardamom, and cinnamon) to the chicken and stir to mix them well.

    Add Water

    Pour 4 cups of water into the pot, bring to a boil, and then reduce the heat to a simmer. Cover the pot and cook for 15 minutes.

    Layer Rice

    Gently layer the soaked and drained rice over the chicken mixture. Do not stir. Cook for another 10-15 minutes on low heat, covered, until the rice is tender and fully cooked.

    Add Fresh Herbs

    Once the rice is cooked, sprinkle chopped cilantro and mint leaves over the top. Cover again and let it rest for 5 minutes.

    Serve

    Garnish the biryani with the fried onions you set aside. Serve hot with raita or salad.
