Prepare the Salad
In a large bowl, combine mixed greens, halved cherry tomatoes, diced cucumber, and thinly sliced red onion.

Dress the Salad
In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Drizzle over the salad and toss gently to combine.
Veg Curry

Add Spices and Coconut Milk
Stir in curry powder, turmeric, and the mixed vegetables. Pour in coconut milk, season with salt, and let it simmer for about 20 minutes until the vegetables are tender.

Finish with Coriander
Once cooked, sprinkle chopped coriander over the curry and serve.
House Curries

Prepare Paneer Curry
In a pan, heat oil and add chopped onion. Cook until translucent, then stir in garam masala and diced paneer. Cook for a few minutes until well combined.

Prepare Spinach Curry
In another pan, sauté cumin seeds and chopped onion. Add washed spinach and cook until wilted. Blend in tomato sauce and simmer for 10 minutes.

Prepare the Rice
In a pot, heat oil and add cumin seeds and bay leaves. Add basmati rice, stirring briefly to coat, then pour in vegetable broth.

Cook the Rice
Bring to a boil, then reduce heat to low, cover, and let simmer for 15-20 minutes or until rice is fluffy and liquid is absorbed.
Naan and Papad

Warm Naan and Papad
Warm naan and papad on a skillet for a minute on each side or until heated through.

Plate the gulab jamun and serve warm as a delightful finish to the meal.
