    Preparing the Chickpeas

    Soak the chickpeas overnight in water. Drain and rinse before cooking.

    Cooking the Potatoes

    In a pot, add diced potatoes and enough water to cover them. Boil until tender, about 10-12 minutes. Drain and set aside.

    Sautéing Aromatics

    In a large skillet, heat cooking oil over medium heat. Add cumin seeds and wait until they sizzle. Add chopped onion and sauté until golden brown, approximately 5-7 minutes.

    Adding Garlic and Ginger

    Stir in minced garlic, grated ginger, and green chilies into the skillet. Cook for another 2-3 minutes.

    Incorporating Tomatoes and Spices

    Add the pureed tomato and cook until the mixture thickens, about 5 minutes. Stir in turmeric powder, coriander powder, red chili powder, and salt.

    Cooking Chickpeas and Potatoes

    Add the soaked chickpeas and boiled potatoes to the skillet. Pour in 2 cups of water, and stir well. Simmer for 15-20 minutes, allowing the flavors to meld together.

    Finishing Touches

    Add garam masala to the mix and let it cook for an additional 5 minutes. Adjust seasoning as necessary.

    Once off the heat, garnish the Chana Masala/Aloo with freshly chopped cilantro.
