Preparing the Okra
Wash the okra thoroughly under running water and dry them completely with a towel. Cut the top and bottom ends off each piece and slice them vertically into thin strips.

Adding Tomatoes and Spices
Chop the tomatoes and add them to the sautéed onion mixture. Stir in turmeric powder, red chili powder, coriander powder, and salt to taste. Cook until the tomatoes are soft and the oil starts to separate from the masala.

Finishing Touches
Once the tomatoes are cooked, add the crispy fried okra to the pan and mix gently to combine without breaking the okra. Sprinkle garam masala and stir again. Cook for another 2-3 minutes to let the flavors meld together.

Serving
Transfer the Bindi Masala to a serving dish and garnish with fresh coriander leaves. Serve hot with chapati or rice.
