    Prepare the Ingredients

    Wash the fish thoroughly and cut it into pieces. Chop the onion and tomato finely. Slit the green chilies.

    Heat the Oil

    In a pan, heat oil over medium heat. Allow the oil to become hot, then add the curry leaves and fry for a few seconds until fragrant.

    Sauté the Onions

    Add the chopped onions to the pan and sauté until they turn translucent and golden brown.

    Add Ginger-Garlic Paste

    Stir in the ginger-garlic paste and sauté for another 1-2 minutes until the raw smell disappears.

    Incorporate the Tomatoes and Spices

    Add the chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook until the tomatoes break down and the oil starts to separate.

    Add the Fish

    Gently add the fish pieces to the curry and carefully mix to combine, making sure they are coated with the spices.

    Pour in Coconut Milk

    Add the coconut milk to the pan, stir gently, and bring the mixture to a simmer. Cook for about 10 minutes, allowing the fish to absorb the flavors.

    Adjust Seasoning

    Taste the curry and add additional salt, if needed. You can also adjust the spiciness by adding extra green chilies at this stage.

    Serve

    Once the fish is cooked through and the curry has thickened slightly, remove from heat. Serve hot with steamed rice or Indian bread.
