    Peel and dice the potatoes into small cubes and wash the spinach leaves thoroughly. Chop the onion and tomato finely.

    In a pan, heat 2 tablespoons of oil over medium heat. Once hot, add the diced potatoes and sauté for about 5-7 minutes until they start to soften.

    Add the chopped onion to the pan with potatoes and sauté until the onions become golden brown. Add 1 teaspoon of cumin seeds, 1 teaspoon of turmeric powder, and 1 teaspoon of red chili powder. Mix well.

    Stir in the chopped tomato and ginger-garlic paste. Cook for another 2-3 minutes until the tomatoes soften and the oil begins to separate from the mixture.

    Add the washed spinach leaves to the pan along with 1 cup of water. Stir well to combine all the ingredients.
