Directions for Making Almond Kulfi

Prep the Almonds
Soak the almonds in hot water for about 30 minutes. This will soften the skins and make them easier to peel.

Peel and Grind Almonds
After soaking, peel the almonds and then grind them into a fine paste using a little bit of milk to help with blending.

Add Cream and Sugar
Add 1 cup of heavy cream and 3 tablespoons of sugar to the simmering milk. Stir well to dissolve the sugar.

Add Flavorings
Stir in 1 teaspoon of cardamom powder, 1 teaspoon of rose water, and a pinch of saffron into the mixture. Cook for an additional 5 minutes.

Cool the Mixture
Remove the saucepan from heat and let the mixture cool to room temperature. This is important before transferring to molds.

Pour into Molds
Once cooled, pour the kulfi mixture into kulfi molds or small cups. Insert wooden sticks if using cups.

Cover the molds with foil and freeze for at least 6 hours or overnight until fully set.
