1. Prepare Vegetables
Peel and cube the potatoes. Cut cauliflower into florets. Chop onions finely and dice tomatoes.
2. Heat Oil
In a large pan, heat vegetable oil over medium heat.
3. Sauté Cumin Seeds
Add cumin seeds to the hot oil and sauté for about 30 seconds or until they start to crackle.
4. Add Onions
Add the chopped onions and sauté until they turn golden brown.
5. Add Tomatoes
Stir in the diced tomatoes and cook for about 5 minutes until they soften.
6. Mix in Spices
Add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for another 2 minutes.
7. Add Vegetables
Add the cubed potatoes, cauliflower florets, and green peas to the mixture. Stir gently to coat the vegetables with the spice mix.
8. Add Water
Add about 1 cup of water to the pan, cover it, and let it simmer for 15-20 minutes or until the vegetables are tender.
9. Finish with Garam Masala
Once cooked, sprinkle garam masala and chopped cilantro over the top. Stir gently.
10. Serve
Serve hot with rice or flatbreads of your choice.
