    Marinating the Chicken

    In a large bowl, combine the chicken pieces with yogurt, garlic, ginger, turmeric powder, red chili powder, and salt. Mix well to thoroughly coat the chicken with the marinade. Cover and refrigerate for at least 1 hour or overnight for best results.

    Preparing the Spice Mix

    In a small bowl, mix together coriander powder, garam masala, and combine with the marinated chicken once it's ready.

    Cooking the Onions

    In a heavy-bottomed pot or pan, heat oil over medium heat. Once hot, add mustard seeds, cumin seeds, and fenugreek seeds. Sauté until they begin to sizzle and pop, about 30 seconds.

    Sautéing Onions

    Add the finely chopped onions to the pot and cook until they turn golden brown, around 10-15 minutes. Stir occasionally to prevent burning.

    Adding Tomatoes

    Once the onions are golden, add the pureed tomatoes to the pot. Cook for another 5-7 minutes until the oil separates from the mixture.

    Add the marinated chicken and spice mix to the pot. Stir well to combine all ingredients.

    Simmering the Curry

    Cover the pot and let the chicken cook on low heat for about 30-35 minutes, stirring occasionally. Add water if the mixture is too thick.

    Once the chicken is cooked through, taste and adjust the salt if necessary. Garnish with fresh chopped cilantro before serving.
