2. Cook the Potatoes
In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced potatoes and cook until golden brown and tender, about 10-15 minutes.
3. Add Onions and Sausage
Add the diced onion and chicken sausage to the skillet. Sauté for another 5-7 minutes until the onions are translucent and the sausage is browned.
4. Add Spinach
Stir in the spinach and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste.
5. Prepare the Eggs
In a bowl, whisk the eggs and season with salt and pepper. Pour the egg mixture over the sautéed vegetables and sausage in the skillet.
6. Cook the Omelette
Reduce the heat to low and cover the skillet. Cook until the eggs are set, about 5-7 minutes. Sprinkle the parmesan cheese on top and let it melt.
7. Serve
Slide the omelette onto a plate and serve with toasted wheat bread on the side.
