    Prepare the Ingredients

    Peel and dice the sweet potatoes into small cubes. Chop the onion and spinach. If using, crumble the country sausage.

    Cook the Sweet Potatoes

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until they are tender and starting to brown.

    Add Onion and Sausage

    Push the sweet potatoes to one side of the skillet. In the cleared space, add the remaining tablespoon of olive oil and the chopped onion. Sauté for about 3-4 minutes until the onion is translucent. If using sausage, add it to the skillet and cook until browned.

    Add Spinach and Eggs

    Add the spinach to the skillet and cook until wilted, about 2 minutes. Create small wells in the hash and crack the eggs into the wells. Cover the skillet and cook until the eggs are set to your liking, about 5 minutes.

    Serve

    Remove the skillet from heat and season with additional salt and pepper if needed. Serve hot.
