Make the Filling
In a mixing bowl, combine ground chicken, shredded cabbage, grated carrot, chopped green onions, minced garlic, grated ginger, soy sauce, and sesame oil. Mix until well combined.

Fill the Wrappers
Place a potsticker wrapper on a clean surface. Spoon about 1 tablespoon of the filling into the center. Moisten the edges with water, fold the wrapper in half, and pinch to seal. Repeat with remaining wrappers and filling.

Cook the Potstickers
In a large skillet, heat vegetable oil over medium-high heat. Place the potstickers in the skillet, flat side down, and cook until golden brown, about 2-3 minutes.

Steam the Potstickers
Carefully add 1/4 cup of water to the skillet and cover immediately. Steam the potstickers for about 5-7 minutes until the water evaporates and the potstickers are cooked through.

Serve
Remove the potstickers from the skillet and serve hot with sweet Thai chili sauce on the side.
