Cook the Macaroni
In a pot of boiling salted water, cook the macaroni according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce
In a saucepan, melt 1 tablespoon of butter over medium heat. Stir in the cheddar cheese until melted and smooth. Combine the cooked macaroni with the cheese sauce and mix thoroughly.

Prepare the Sandwich
Spread dijon mustard on one side of each slice of sourdough bread. On the non-mustard side, layer half of the provolone cheese, followed by a generous scoop of the mac and cheese mixture, and then the remaining provolone cheese. Top with another slice of sourdough, mustard side down.

Grill the Sandwich
In a skillet, melt the remaining tablespoon of butter over medium heat. Place the sandwich in the skillet and cook until golden brown, about 3-4 minutes per side, pressing down gently with a spatula.

Serve
Once both sides are golden and the cheese is melted, remove the sandwich from the skillet. Let it cool for a minute, then slice in half and serve warm.
