    Make the béchamel sauce

    In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute until it forms a paste (roux). Gradually whisk in the milk, and continue to cook until the sauce thickens. Add the nutmeg, salt, and pepper to taste.

    Assemble the sandwich

    Spread Dijon mustard on two slices of sourdough bread. Layer with ham and grated gruyère cheese. Top with the remaining sourdough slices.

    Toast the sandwich

    In a skillet, melt a little butter over medium heat. Add the assembled sandwiches and cook until golden brown on both sides, about 3-4 minutes per side.

    Fry the eggs

    In the same skillet, crack the eggs and fry them sunny-side up or to your desired doneness.

    Serve

    Place the toasted sandwiches on a plate, pour the béchamel sauce over the top, and add a fried egg on each sandwich. Serve immediately.
