Assemble the Puffs
Preheat the oven to 400°F (200°C). Roll out the puff pastry on a floured surface and cut into circles (about 4 inches in diameter). Place a tablespoon of the potato mixture on one half of each circle. Fold the pastry over to create a half-moon shape and seal the edges with a fork.

Bake the Puffs
Brush the tops of the puffs with the beaten egg for a golden finish. Place on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.

Make the Curry Aioli
In a small bowl, combine mayonnaise, minced garlic, curry powder, and lemon juice. Mix well and adjust seasoning to taste.

Serve the baked cheddar potato puffs warm with the curry aioli on the side.
