Cook the Pork
In a slow cooker, combine the pork shoulder, orange juice, lime juice, garlic, cumin, oregano, salt, black pepper, and bay leaves. Cook on low for 8 hours or until the pork is tender and shreds easily.

Shred the Pork
Once the pork is cooked, remove it from the slow cooker and shred it using two forks. Discard any excess fat and bay leaves.

Assemble Tacos
Warm the corn tortillas on a skillet. Fill each tortilla with shredded pork, top with avocado salsa, and sprinkle with cotija cheese and additional cilantro as desired.
