    Prepare Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it sit covered for 10 minutes.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm rice using a wooden spatula. Let the seasoned rice cool to room temperature.

    Form Nigiri

    Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and form it into an oval shape. Top each rice ball with a slice of the appropriate sashimi (Tuna, Yellowtail, Fresh Salmon, Albacore, White Fish, Shrimp, Eel, and Chef's Selection).

    Prepare Edamame

    Boil edamame in salted water for 3-5 minutes until bright green and tender. Drain and serve warm.

    Assemble the Platter

    Arrange the nigiri on a platter along with the edamame. Serve with soy sauce and wasabi on the side.
