Cook the Mochi
Cover the bowl with plastic wrap and microwave on high for 1 minute. Stir, then microwave for another minute. Stir again, then microwave for an additional 30 seconds. The mixture should become sticky and slightly translucent.
Dust with Cornstarch
Dust a clean surface with cornstarch. Transfer the mochi dough onto the surface and use cornstarch on your hands to prevent sticking. Flatten the dough into a rectangle about 1/2 inch thick.
Cut and Shape the Mochi
Cut the mochi into squares or circles using a cookie cutter. Each piece should be large enough to wrap around a scoop of ice cream.
Assemble the Mochi Ice Cream
Scoop the ice cream into balls and place each ball in the center of a mochi piece. Carefully wrap the mochi around the ice cream and pinch to seal. Place seam side down.
Freeze
Place the assembled mochi ice cream in the freezer for at least 1 hour to firm up before serving.
