1. Prepare the Ingredients
Chop the firm tofu into bite-sized cubes, slice the green onions, peel and julienne the carrots, mince the garlic, and grate the ginger.
2. Cook the Udon Noodles
In a large pot, bring water to a boil and cook the udon noodles according to package instructions. Once cooked, drain and set aside.
3. Make the Broth
In the same pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sauté for about 1 minute until fragrant. Pour in the vegetable broth and soy sauce, and bring to a simmer.
4. Add Vegetables and Tofu
Add the chopped carrots and simmer for 3-4 minutes until slightly tender. Then, add the tofu cubes and spinach, cooking for an additional 2-3 minutes.
5. Combine Noodles and Broth
Add the cooked udon noodles to the pot, stirring gently to combine. Allow to heat through for 1-2 minutes.
6. Serve
Ladle the soup into bowls, garnish with sliced green onions, and serve warm.
