Instructions for Making Kappa Maki

    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, transfer to a bowl and let it cool slightly.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour this mixture over the rice and gently fold it to combine. Allow the rice to cool to room temperature.

    Prepare the Cucumber

    Peel the cucumber and cut it into long, thin strips. You can use a mandoline for even slices.

    Assemble the Roll

    Place a bamboo sushi mat on a clean surface and lay a nori sheet shiny side down. Wet your hands with water to prevent sticking, then spread a thin layer of sushi rice over the nori, leaving about an inch at the top edge. Place a line of cucumber strips in the center of the rice.

    Roll the Sushi

    Using the sushi mat, carefully roll the nori away from you, applying gentle pressure to shape the roll. Roll it tightly but not too tight to avoid squeezing out the filling.

    Slice the Roll

    Wet a sharp knife with water and slice the roll into bite-sized pieces. Wipe the knife with a damp cloth between cuts for cleaner slices.

    Serve

    Arrange the Kappa Maki on a plate and serve with wasabi and soy sauce on the side.
