Blanch the Asparagus
Bring a large pot of water to a boil. Trim the ends of the asparagus and prepare an ice bath in a large bowl. Once the water is boiling, add the asparagus and cook for 2-3 minutes until bright green and tender-crisp. Remove from the pot and immediately plunge into the ice bath to stop cooking.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Ensure there is enough oil to fully submerge the asparagus when frying.

Fry the Asparagus
Carefully add the blanched asparagus to the hot oil in batches, frying for about 2-3 minutes until crispy and golden. Remove with a slotted spoon and place on paper towels to drain excess oil.

Season the Asparagus
While the asparagus is still hot, sprinkle with sansho pepper and yuzu salt to taste.

Serve with Zig Zag Sauce
Arrange the fried asparagus on a serving plate and drizzle with Zig Zag sauce. Serve immediately.
