Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook it according to package instructions. Once cooked, mix rice vinegar, sugar, and salt in a small bowl until dissolved. Stir this mixture into the warm rice and let it cool.

Assemble the Sushi Roll
Place a bamboo sushi mat on a flat surface. Lay the nori sheet on the mat, shiny side down. Wet your hands to prevent sticking and spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge. Arrange the ebi, cucumber, and avocado in a line across the rice.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Moisten the edge of the nori with water to seal the roll.

Cut the Roll
Using a sharp knife, slice the roll into bite-sized pieces. Wipe the knife with a damp cloth between cuts to ensure clean edges.

Prepare the Sauce
In a small bowl, mix gluten-free soy sauce, sesame oil, and wasabi to create a dipping sauce.

Arrange the sushi on a plate, garnish with pickled ginger, and serve with the dipping sauce.
