1. Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, mix the rice vinegar, sugar, and salt in a small bowl and stir into the rice. Let it cool.
2. Prepare the Shrimp
Fry the panko shrimp in a pan until golden brown and crispy. Drain on paper towels and set aside.
3. Prepare the Avocado
Slice the avocado in half, remove the pit, and scoop out the flesh. Cut it into thin slices.
4. Make the Sauce
In a small bowl, mix the mayonnaise and Sriracha sauce together until well combined.
5. Assemble the Roll
Place a sheet of nori on a bamboo sushi mat. Spread a thin layer of sushi rice over the nori, leaving about an inch at the top. Layer the panko shrimp, avocado slices, and a drizzle of the spicy mayo sauce. Sprinkle with masago and green onions.
6. Roll it Up
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge with a little water.
7. Slice and Serve
Using a sharp knife, slice the roll into bite-sized pieces. Serve with additional spicy mayo and soy sauce if desired.
