Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, transfer to a bowl and let it cool slightly.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour the mixture over the rice and fold gently to combine. Allow the rice to cool to room temperature.

Assemble the Sushi Rolls
Place a bamboo sushi mat on a flat surface. Lay a nori sheet shiny side down on the mat. With wet hands, spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge.

Roll the Sushi
Starting from the edge closest to you, lift the bamboo mat and roll it over the filling tightly. Continue rolling until you reach the exposed edge of the nori. Wet the edge with a little water to seal the roll. Repeat with remaining ingredients.

Slice the Rolls
Using a sharp knife, slice each roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.

Serve
Arrange the sushi rolls on a plate, sprinkle with sesame seeds, and serve with soy sauce, wasabi, and pickled ginger on the side.
