Prepare the Salmon
Cut the salmon fillet into small cubes. Season with salt and black pepper.

Cook the Salmon
In a skillet, heat 1 tablespoon of cooking oil over medium heat. Add the salmon cubes and cook until they are just cooked through, about 3-4 minutes. Remove from heat and let cool.

Prepare the Crab Mix
In a bowl, mix the imitation crab meat with lemon juice and a pinch of salt. Set aside.

Prepare the Avocado
Slice the avocado into thin strips.

Coat with Panko
In a shallow dish, spread the panko breadcrumbs. Once the salmon is cooled, toss it in the panko until coated.

Assemble the Hand Roll
Take a soy wrap and place some of the panko salmon, crab mix, and avocado in the center. Add a dollop of Mikuni salsa on top.

Roll it Up
Fold the sides of the soy wrap inward and roll it tightly from the bottom to the top to form a hand roll.

Serve
Slice the hand roll in half if desired and serve immediately with extra Mikuni salsa on the side.
