    Make the Filling

    In a large bowl, combine ground pork, ground chicken, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are evenly combined.

    Fill the Gyoza

    Take a gyoza wrapper and place about 1 tablespoon of the filling in the center. Moisten the edges of the wrapper with water, fold it in half, and pinch the edges to seal tightly. Repeat with the remaining wrappers and filling.

    Cook the Gyoza

    In a large skillet, heat 2 tablespoons of oil over medium-high heat. Arrange the gyoza in a single layer and cook until the bottoms are golden brown, about 3-4 minutes. Carefully add 1/4 cup of water to the pan, cover immediately, and steam the gyoza for about 5 minutes.

    Crisp the Gyoza

    Remove the lid and continue to cook for another 2-3 minutes or until the water has evaporated and the gyoza are crispy on the bottom. Remove from the skillet and serve hot.
