    Cook the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a pot and bring to a boil. Once boiling, reduce heat to low, cover and simmer for 20 minutes. Remove from heat and let sit covered for 10 minutes.

    Prepare the Rice

    In a small bowl, mix the rice vinegar with a pinch of salt. Once the rice has finished cooking, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

    Prepare the Fillings

    While the rice cools, shred the imitation crab meat and slice the avocado into thin strips.

    Assemble the Rolls

    Place a sushi mat on a flat surface. Lay a nori sheet shiny side down on the mat. Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving about a 1-inch border at the top. Sprinkle sesame seeds over the rice.

    Add the Fillings

    Place a line of shredded imitation crab and avocado strips along the bottom edge of the rice-covered nori.

    Roll the Sushi

    Using the mat, carefully lift the edge of the mat closest to you and roll it over the fillings, pressing gently to form a tight roll. Continue rolling until you reach the exposed edge of the nori. Moisten the edge with a little water to seal.

    Slice and Serve

    Using a sharp knife, slice the roll into 6-8 pieces. Repeat with the remaining ingredients. Serve with soy sauce and wasabi on the side.
