    Cook the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it cool slightly.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Fold this mixture into the cooked rice gently using a wooden spatula. Allow the rice to cool to room temperature.

    Prepare the Vegetables

    Slice the avocado in half, remove the pit, and scoop out the flesh. Cut it into long strips. Peel the cucumber and slice it into thin strips.

    Assemble the Rolls

    Place a bamboo sushi mat on a flat surface and lay one sheet of nori on top, shiny side down. With wet hands, spread a thin layer of sushi rice over the nori, leaving a small border at the top. Arrange the avocado and cucumber strips horizontally across the rice.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge of the nori with a little water. Repeat with remaining ingredients.

    Slice and Serve

    Using a sharp knife, slice the rolls into bite-sized pieces. Sprinkle with sesame seeds and serve with soy sauce and wasabi on the side.
