Preparation of Veal

Season the veal cutlets with salt and black pepper on both sides.

Coat each seasoned cutlet in flour, shaking off any excess.
Cooking the Veal

Heat the Oil and Butter
In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat until hot.

Add the veal cutlets to the skillet and cook for about 3-4 minutes on each side, or until golden brown and cooked through. Remove them and set aside.
