Cannoli Shells

Mix Dry Ingredients

In a medium bowl, whisk together the flour, sugar, cocoa powder, and salt until well combined.

Add Wet Ingredients

Add the softened butter and egg yolks to the dry ingredients and mix until crumbly.

Knead Dough

Stir in the white wine or vinegar, and knead the dough until it is smooth and elastic. Wrap in plastic wrap and refrigerate for at least 30 minutes.

Roll and Cut Dough

On a floured surface, roll out the dough to about 1/8 inch thick. Cut into circles using a round cutter (about 4 inches in diameter).

Shape Cannoli

Wrap each circle around a cannoli tube, sealing the edges with a little water.

Fry Shells

Heat oil in a deep fryer or large pot to 350°F (175°C). Carefully fry the shells until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Ricotta Filling

Mix Filling

In a mixing bowl, combine the ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

Add Chocolate Chips

Fold in the mini chocolate chips until evenly distributed.

Prepare Filling for Shells

Once the cannoli shells are completely cooled, fill a piping bag with the ricotta filling.

Fill Cannoli

Pipe the filling into each cannoli shell, filling both ends generously.
