Preparation
- 1
Cook the Pasta
In a large pot, bring water to a boil. Add a pinch of salt and the spaghetti. Cook according to the package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
Cooking
- 2
Sauté the Vegetables
In a large skillet, heat 3 tablespoons of extra virgin olive oil over medium heat. Add the sliced zucchini and sauté for about 3-4 minutes until slightly tender.
- 3
Add Seafood
To the skillet, add the shrimp and haddock chunks. Cook for 3-5 minutes until the shrimp turns pink and the haddock is cooked through.
- 4
Deglaze with Wine and Add Sauce
Pour in the white wine, scraping the bottom of the skillet to deglaze. Let it simmer for 2 minutes before adding the sweet tomato basil sauce and artichoke hearts. Stir well.
- 5
Combine with Pasta
Add the cooked spaghetti to the skillet, tossing everything together. Stir in the chopped olive mix, and season with salt and black pepper to taste. Cook for an additional 2-3 minutes, allowing the flavors to meld.
Serving

Plate and Serve
Serve the Tuscan seafood pasta warm, garnished with fresh basil or parsley if desired.
