Method

Preparing the Coffee Mixture

  1. 1

    Make the Espresso

Brew 1 cup of strong espresso coffee. Once brewed, stir in 1 tablespoon of granulated sugar until dissolved. Allow the coffee to cool to room temperature.

Preparing the Mascarpone Mixture

  1. 2

    Whip the Cream

In a mixing bowl, whip 1 cup of heavy cream until soft peaks form. Set aside.

  2. 3

    Mix Egg Yolks and Sugar

In another bowl, whisk together 4 egg yolks and 1 tablespoon of granulated sugar until the mixture is pale and creamy.

  3. 4

    Combine with Mascarpone

Gently fold in 500g of mascarpone cheese and 1 teaspoon of vanilla extract into the egg yolk mixture until well combined.

  4. 5

    Fold in Cream

Carefully fold the whipped cream into the mascarpone mixture until fully incorporated, being careful not to deflate the whipped cream.

Assembling the Tiramisu

  1. 6

    Soak the Ladyfingers

Dip each ladyfinger (24 pieces) into the cooled espresso mixture quickly, ensuring they are soaked but not soggy.

  2. 7

    Layering

In a rectangular dish, place a layer of soaked ladyfingers at the bottom. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of soaked ladyfingers and top with the remaining mascarpone mixture.

Finishing Touches

  1. 8

    Chill

Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight to allow the flavors to meld.

  2. 9

    Serve

Before serving, dust the top with 2 tablespoons of cocoa powder for a finishing touch.
